𝗥𝗲𝗰𝗶𝗽𝗲 𝗶𝗱𝗲𝗮💡 Autu

𝗥𝗲𝗰𝗶𝗽𝗲 𝗶𝗱𝗲𝗮💡 Autumn vibes in this yum soup. 🍂
If u visited our cafe during lockdown, this comforting, filling Chilli, Red Lentil + Veg Soup was on most days and it was a crowd pleaser, we always got asked for it.

It's going on the menu this weekend for a Private Dinner Event for 30ppl. Can be made in a large batch and freezes really well. Let us know if you try it! 💛

𝗥𝗲𝗰𝗶𝗽𝗲
50ml extra virgin olive oil
1 white onion, chopped
2 carrots, peeled and chopped
4 garlic cloves, pressed or minced
2 teaspoons ground cumin
1 teaspoon curry powder
½ teaspoon dried thyme
1 can diced tomatoes,
250g red lentils, picked over and rinsed
1lt vegetable broth
500 cups water
1 teaspoon salt, more to taste
Pinch of red pepper flakes
Freshly ground black pepper, to taste

𝗠𝗲𝘁𝗵𝗼𝗱
1. Warm the olive oil in a large pot over medium heat.
2. Add chopped onion and carrot and cook until the onion has softened and is turning translucent, about 5 minutes.
3. Add the garlic, cumin, curry powder, and thyme. Cook until fragrant while stirring constantly.
4. Add tomatoes and cook for a few more minutes, stirring often.
5. Add the lentils, stock and water. Add 1 teaspoon salt and a pinch of red pepper flakes. Season generously with freshly ground black pepper.
6. Bring to a boil, then partially cover the pot and reduce the heat to maintain a gentle simmer. Cook for 25 to 30 minutes, or until the lentils are tender.
7. Transfer 2 cups of the soup to a blender and purée the soup until smooth (be careful!!). Add back into soup.
8.Add the chopped greens and cook for 5 mins. Remove the pot from the heat and stir in 1 tablespoon of lemon juice.
Serve!
